Off The Record, Cabernet Franc 2023

Description

This is the first vintage of Off The Record, Cabernet Franc. Produced from a small vineyard grown on the family farm in Elgin. The vineyard grows in a unique sight on iron rich Bokkeveld shale soils.

Only 900 bottles were produced from the 2023 release.

DESCRIPTION:

The Cabernet Franc presents with a deep garnet centre and vibrant ruby red rim. The wine has an aromatic nose of dark summer fruits, strawberry, wild brambles and a touch of violets. This follows through onto a lively palate where the fruits are further supported by a dried herbal element , cracked red peppercorn and finely integrated wood tannins. The slightly savoury profile is typical of this red wine, and contributes towards the texture, appeal and drinkability.

WINEMAKING:

These pristine grapes received a three day cold soak prior to fermentation which extended over a period of 10 days. 20% wholebunch fraction with the rest being de-stemmed. They received a mixture of pumpovers and punchdowns during the fermentation process, which was then followed by a 9 day post fermentation maceration. After pressing the wine was aged in 300L barrels (33% new; 33% 2nd fill; 33% 3rd fill) for 10 months maturation The wine received a light filtering prior to bottling.
