Dornier, Equanimity Cabernet Sauvignon 2020
Dornier is a family owned winery situated in the ‘Golden Triangle’ of the famous Upper Blaauwklippen Valley – in the fine company of De Trafford, Waterford and Keermont. The property produces premium quality wines, with minimal intervention in the winery, that are expressive of the terroir.
Their single varietal Cabernet Sauvignon is a great example of this noble variety, from its preferred region in Cape – the slopes of the Helderberg. After fermentation the wine was aged for 18 months in French oak barrels, 35% of which was new.
Expect concentrated dark fruit of blackcurrant and cassis to jump out of the glass alongside cigar box, pencil shavings and vanilla from clever use of oak. The tannins are elegant and fine-grained, resulting in a delicious well-balanced drop.

Description
Tasting Note by the Winemaker
A good example of this noble variety with concentrated fruit, great structure and the ability to age well. Intense black cherry colour with a full bouquet of cassis, black berries, cigar box, pencil shavings and subtle oak and a hint of mint to ensure freshness. The palate has density and concentrated flavours of dark fruit with elegant tannins to create a well-balanced wine with a long finish.
Vintage Conditions
The ripening season leading up to the 2020 harvest provided excellent conditions for optimal ripeness and flavour development that resulted in exceptional fruit concentration and elegance in the wines of this vintage.
Fermentation and Ageing
This wine was fermented in open tanks with pump overs and punch downs being performed four times daily to extract all possible flavours from the berries. After alcoholic fermentation the wines underwent malolactic fermentation in barrel followed by 18 months ageing in 35% new French oak barrels.

From 2024 for up to 8 years.
