Dornier, Cocoa Hill Ruby Red 2022
Dornier is a family owned winery situated in the ‘Golden Triangle’ of the famous Upper Blaauwklippen Valley – in the fine company of De Trafford, Waterford and Keermont. The property produces premium quality wines, with minimal intervention in the winery, that are expressive of the terroir.
Merlot (35%), Shiraz (32%), Cabernet Sauvignon (19%), Petit Verdot (7%) and Malbec (7%) – each component was separately fermented and barrel aged, in older French oak, for 12 months before blending. A small un-oaked component was also added to bring some freshness to the blend to ease earlier drinking.
A full bodied red with aromas of red and black fruit, some freshly ground pepper and a hint of spice. The concentrated fruit, fresh acidity and find tannin give rise to a long finish.

Description
Cocoa Hill Red 2022 is a blend of Merlot (35%), Shiraz (32%), Cabernet Sauvignon (19%), Petit Verdot (7%) and Malbec (7%) from vines that grows in the decomposed granite soils of Cocoa Hill – a hilltop in the folds of the Stellenbosch Mountain.
Tasting Note by the Winemaker
The wine shows aromas of black and red fruit, pepper and a hint of spice. The palate is flavourful and well balanced with concentrated fruit, fresh acidity and fine tannins and a lingering finish.
Vineyards
The vines are planted on Dornier wine’s Groenkloof farm on the slopes of the Stellenbosch Mountain. The soil is composed of coffee coloured decomposed granite. The vines get full sun which allows for the optimum development of rich berry characters and smooth tannins in the grapes.
Cocoa Hill Winemaking
All components of this blend were fermented separately in vineyard specific batches with pump-overs for colour and tannin extraction being performed five times daily. The Ruby Red wine was barrel matured for 12 months in French oak barrels and a small un-oaked component was used to provide a fresh and lively character.
