Eikendal, Infused by Earth Chardonnay 2017

Made from a single block of low yielding bush vines that have some maritime influence from False Bay.

No malolactic fermentation or battonage leads to an alluring, understated wine with a beautiful perfumed aroma of citrus fruit. Enigmatic.

“Fermented in granite amphorae and 60% new wood, it’s a toasty, complex wine with pithy acidity and impressive palate length.” – Tim Atkin.

Description

EIKENDAL
Situated in the “Golden Triangle” of wine growing, at the foot of the Helderberg mountains, Eikendal vineyards flourish in a mountain and maritime microclimate, ideal for the production of quality wine.

VINEYARDS
Two blocks of bush vine planted at the top of the farm into decomposed granite. The Soil is only 60-80cm deep with gravel mixed into the granite and white clay which is very significant in that all organic matter has been washed out. These vines are facing the south-easter wind head on all the time, receiving the cool air at night from False Bay. These result in putting the vines well and truly in survival mode, yielding only around 0.8 – 1kg of grapes per vine and they carry the message of the land.

VINIFICATION
Whole bunch press. No settling of the juice. Goes straight to stainless steel tank. 50% of spontaneous fermentation in stainless steel. Last 50% of fermentation was done 60% in 500l “new” barrel, specially made by Bruno for this wine and 40% in a granite amphora. This means fermenting and ageing granite in granite. 18 months aging.

No fining or filtration. Natural settling of wine.

Fermented in granite amphorae and 60% new wood, it’s a toasty, complex wine with pithy acidity and impressive palate length. 2020-27”
