WINEMAKER’S TASTING NOTES

The 2016 Eagles’ Nest Shiraz is a bright ruby colour.

Perfume and floral aromas combine harmoniously with red cherry and spice on the nose.

These flavours gracefully carry through to a savoury, spicy palate, with aromas of star anise and cloves. These flavours are complimented by pure, clean red fruit flavours. Soft, well integrated tannins coat the palate, leading to a distinct fresh finish.

A truly great wine from maturing vineyards, this wine will age gracefully for 20 years from vintage.

ABOUT EAGLES’ NEST

Eagles’ Nest, located on the crest of Constantia Nek pass, is nestled at the foot of the awe inspiring Table Mountain. This pristine and boutique family owned vineyard has in recent years gained a striking reputation for both its beauty and award winning wines.

Uniquely characteristic of its wines is its signature of finesse, derived from cooler climate conditions its vines are exposed to as a result of its elevation and close proximity to the oceanic body that is False Bay, thus delivering very distinctive wines not found elsewhere in South Africa.

Quality and consistency is paramount at Eagle’s Nest. Our unique terroir, combined with meticulous attention to detail in the vineyard and cellar, yields wines that are the epitome of elegance and balance.

PRODUCTION

The vineyard aspect range from east to north, and are perfectly positioned for a cool climate Shiraz. All grapes were hand picked, de-stalked and crushed into medium sized open top fermenters.

Punch-downs or pump-overs were performed three to four times per day. Fermentation took 10 days to complete, after which the free run wine was drawn off and the skins were pressed. The wine was then racked into French oak barrels. After 18 months in barrel (35% new), selected components of the wine were blended to create a complex and harmonious finished product.
