Cederberg, Five Generations Cabernet Sauvignon 2018

The flagship red wine from the Cederberg range, of which only 5,600 bottles are produced.

The wine has ripe dark fruit on the nose and palate that are perfectly married with cedar wood, clove and mocha from 18 months in new French oak barrels. Firm, but ripe, tannins give the wine great ageing potential.

WINEMAKER’S TASTING NOTES

A wine of stature, the Cabernet Sauvignon shows a beautiful combination of blackcurrant and plums with subtle hints of cedar wood and clove spice. A wine rich in flavour with a ripe tannin structure that has velvet finish on palate.

ABOUT CEDERBERG

David Nieuwoudt, the current winemaker, is a fifth generation Nieuwoudt on the Cederberg Private Cellars property – his family moved there in 1893. After David’s grandfather, Oom Pollie, made wine from excess table grapes he was convinced to plant wine vines and produced his first vintage in 1977.

WINEMAKING

Grapes are hand harvested at 24.5 – 25.0 balling.

Cold soak for two days before it is inoculated with yeast. During fermentation colour/flavour extraction takes place with regular pump-overs every six hours along with two to three manual punch downs of the grape cap. A maximum temperature of 27°C is reached.

On completion of fermentation a further 14-18 days of extended skin maceration takes place before pressing and barrelling in 225L French oak.

MATURATION

Malolactic fermentation is completed in barrel and maturation is over 18 months. A premium selection of only 18 barrels. 100% 1st fill barrel only of tight and medium grain with medium and medium-plus toasting.

The wine which emerged with the laurel wreath and a spot in our top 50 Best In Show is one of the most remotely sited in the country, hidden away in the high Cederberg.

    It’s tempting to see a mountain purity in this dark wine, and the altitude can surely be read in the freshness of its blackcurrant fruits and their near-leafy charm. Those fruits drive through the palate with remarkable purity, length and, once again, freshness; it carries its alcohol with ease; and the finish is clean and bright.

    The tannins are soft, almost hidden behind the acidity, but they are there to bring a touch of cleansing bitterness which refreshes further.”
